Happy foods take on new meaning as the weather cools, especially foods made with serious craft beer.
This delicious recipe comes from Justin Golinski Culinary Director at Founders Brewing in Grand Rapids, Michigan. And it originally used the brewery’s Imperial Stout (see Above), which is unfortunately no longer available, so we substituted Founder of Portera robust 6.5% ABV caramel malt dark ale that pours silky black with a creamy tan head that gets the job done.
“I love using salmon for this recipe, which is unique and different,” says Chef Golinski “but I urge you to try it. If you prefer a milder fish, I would suggest cod or tilapia.
So, let’s do it!
Robust Porter Fish & Chips
Ingredients
- (2) 5oz salmon fillets
- 2 3/4 cups seasoned flour
- (1) 12oz bottle of Founders Porter
- 4oz kettle-cooked potato chips (crushed)
- 2 Idaho russet potatoes
- vegetable oil for frying
Directions
- In a large pot, heat your oil to 350 degrees
- Arrange the three containers accordingly:

- First: 1 cup of seasoned flour
- Second: Founders Porter batter (12oz bottle of beer + 1 3/4 cups of flour)
- Third: crushed potato chips
- Pat your salmon filets dry and cut them into 4 equal pieces.
- Dredge each piece of salmon through the seasoned flour, then the beer batter and, finally, the potato chips. Make sure they are covered evenly.
- Drop the battered salmon filets into the heated fry oil until they float and turn golden brown in color. Remove with a slotted spoon or other tool that is a safe method of deep-dry retrieval.
- Place the fish on paper towels to catch excess oil.
French Fries
- Cut your potatoes into your favorite fried shape, put them in a pot of water and boil them. Cook them just long enough to soften slightly. Drain the water and put them aside.
- Drop your potato pieces into the heated fry oil. Let it cook until it floats and turns golden brown in color.
(Serve with your beer battered fish and coleslaw)
Tartar Sauce
- 1/2 cup of mayonnaise
- 1/4 cup chopped dill pickle
- 1/8 cup apple cider vinegar
- 1/8 cup packed brown sugar
(Just mix those ingredients together in a medium-sized bowl and you’re done!)
